There are three bananas on my counter right now going soft and spotty, and I know exactly what's about to happen to them. Same thing that happens every week. Nobody in my house wants to eat a banana once it gets even slightly freckled, but those are the exact bananas that make the best loaf. So this banana bread recipe is really just my survival plan for sad fruit, written down so you can save yours too.

It started as a recipe I scribbled on the back of an envelope, then I tweaked it a dozen times until it became the thing my flatmates would wake up early for. It's one bowl. It's forgiving.   • About 1/3 cup melted butter, or a neutral oil if you'd rather
  • Roughly 3/4 cup sugar (white, brown, or a mix)
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • A pinch of salt
  • About 1 and 1/2 cups plain flour
  • Optional: a handful of chopped walnuts or chocolate chips

That's it. No buttermilk, no fancy spices, though a little cinnamon never hurt anybody. If you've got an extra banana, throw it in. The recipe doesn't mind.

How to make it

  1. Heat your oven to about 350F (175C) and line a standard loaf tin with parchment, or grease it well. The lining matters more than you'd think when it's time to lift the loaf out.
  2. Peel the bananas into a big bowl and mash them with a fork until they're mostly smooth. A few lumps are fine. They'll bake right in.
  3. Pour in the melted butter and stir. Then add the sugar, beaten egg, and vanilla, and mix until everything looks glossy and combined.
  4. Sprinkle the baking soda and salt over the top and give it a quick stir.
  5. Add the flour and fold it in gently. Stop the moment you can't see dry flour anymore. This is where you resist the urge to keep stirring.
  6. If you're using walnuts or chocolate chips, fold them through now with two or three light strokes.
  7. Scrape the batter into your tin and smooth the top. Bake for roughly 50 to 60 minutes.
  8. Check it with a toothpick or a thin knife poked into the center. If it comes out clean or with a few dry crumbs, you're done. Wet batter means give it another five to ten minutes.

Let it sit in the tin for about ten minutes before you turn it out, otherwise it can tear. Then lift it onto a rack to cool. Or don't. I've cut into a steaming loaf more times than I'll admit, butter melting straight in, and zero regrets.

A few honest tips

The single biggest thing? Those bananas. If yours aren't ripe enough, you can cheat by roasting them in their skins at 350F for about fifteen minutes until they go black and soft. It's not quite the same, but it gets you close in a pinch.

Don't overmix. I keep saying it because I keep seeing people whip the batter like they're making a cake. Gluten is the enemy here. Lumpy batter bakes into a beautiful loaf, so trust it.

Every oven lies a little. Mine runs hot, so I start checking at the 48-minute mark. If the top is browning too fast but the middle's still raw, drape a bit of foil over it and carry on.

And the tin. Line it. I learned this the hard way after leaving half a gorgeous loaf welded to the bottom of an unbuttered pan. Parchment with a little overhang gives you handles to lift the whole thing out.

Easy variations once you've got the base down

The plain loaf is the one I make most, but this batter is a generous base that takes well to changes. Want muffins instead? Spoon the batter into a lined muffin tin and cut the bake time way down, to roughly 18 to 22 minutes, since the smaller portions cook fast. Great for lunchboxes, and they freeze just as well as slices.

If you're after something a little less indulgent, swap half the plain flour for whole wheat, drop the sugar by a few spoonfuls, and lean on an extra banana for sweetness. The crumb gets a touch heartier, but it still tastes like a treat rather than a punishment. You can also fold in a grated apple or a handful of blueberries for moisture.

Baking for someone vegan? Skip the egg and use a flax egg instead (one tablespoon of ground flaxseed stirred into three tablespoons of water, left to thicken for five minutes), and use oil in place of the butter. It works genuinely well here, because the bananas already do so much of the binding. Chocolate chips, chopped dates, a swirl of peanut butter, a scatter of cinnamon and walnuts on top before it bakes. None of it is wrong. The loaf is forgiving enough to be a canvas.

My one weird habit

Here's my confession. I bake this almost every Sunday, slice the whole loaf once it's cool, and stash most of it in the freezer wrapped slice by slice. Then on a gray Tuesday morning I drop a frozen slab straight into the toaster. Two minutes later it's warm and the edges go just slightly crisp, and it tastes like the weekend showed up early.
